Pidehuis opened its doors on Vlamingstraat in 2011, when Mehmet Yıldız left Gaziantep with a single cast-iron pide tray and a recipe his grandmother refused to write down.
Den Haag gave him a neighbourhood; the neighbourhood gave him a reason to stay. Every loaf is still shaped by hand, baked in the same stone oven, pulled from the fire at the same moment — when the crust just begins to sing.
